Vineyard and terroir
The Moscato grapes come from vineyards in the Langhe. The vines are more than 40 years old.
Vinification
The grapes are usually harvested by hand in late August or early September. At the winery they are gently pressed and then cold settled. Fermentation takes place in autoclaves at a controlled 12–14 °C and is stopped when the alcohol reaches 5%. The wine does not undergo malolactic fermentation. It is filtered before bottling, and sterile filtration at bottling preserves its natural freshness, aroma and fine bubbles.
