Grapes
Made exclusively from Sagrantino grapes that undergo partial drying. It is the traditional sweet expression of the variety.
Vinification
The grapes are harvested by hand at the end of September and placed in single layers in crates. Bunches particularly suitable for drying are selected, then left in crates for about two months. The cellar’s two-level layout allows the fruit to be transferred by gravity. Fermentation takes place on the skins at low temperature.
Ageing
The wine matures for at least one year in large oak barrels and subsequently receives extended bottle ageing.
Technical data
The 2020 vintage has 14.5% alcohol by volume. The wine contains sulfites and is offered in a 375 mL bottle.
Tasting profile
The colour is a deep ruby moving toward garnet. The bouquet is rich and complex, combining cherries, wild-berry jam, candied citrus peel and spices. Its initially sweet palate develops into a fresh finish, with persistent aromatic impressions echoing the nose.
Serving and pairing
Serve at 16°C. Pair with red-fruit tarts, biscuits, gianduja chocolate or mature cheeses.
Label / history
First produced in 1979, this is the traditional passito version of Montefalco Sagrantino. Its name is linked to the Latin word “sacer,” referring to a sacred wine consumed during Christian festivities.
