Vineyard and terroir
The grapes come from the Collalto località Castagne area, at 200–300 metres above sea level. The steep hillsides have soils of morainic origin and clay rich in calcium carbonate, as well as a favourable microclimate. Borgoluce’s vineyards are situated in the Alpine foothills of Treviso, between the hills of Conegliano and Valdobbiadene; the vines are planted on south-facing mountain slopes exposed to the sun’s warmth.
Vinification
The grapes are harvested in mid-September and gently pressed. Fermentation proceeds slowly with selected yeasts at around 10 °C. The wine is then made sparkling by the Charmat method, undergoing a 60-day secondary fermentation in sealed autoclaves at 15–16 °C. It is cold-stabilised at −1 °C and microfiltered before bottling.
Ageing
The wine rests on its fine lees for five months before the secondary fermentation.
