Vineyard and terroir
The fruit comes from old vineyard plots, harvested at full phenolic ripeness. The estate’s vineyards are situated around the village of Ama, between two hills in Gaiole in Chianti, Siena, at an altitude of 500 m. The site has rich soils and a favourable climate.
After studying the land and conducting vineyard trials for ten years, the estate identified the site considered best suited to Sangiovese. Around 50,000 vines were grafted over five years, while 21 ha were gradually converted to a V-shaped training system, allowing more leaves to receive sunlight.
Vinification
For the 2013 vintage, harvesting ran from 28 September to 9 October. The grapes were selected on a sorting table, crushed and destemmed. Fermentation took place in stainless-steel tanks at approximately 30–33 °C. Fermentation and the subsequent maceration lasted a total of 23–25 days. Malolactic fermentation was carried out in 900 hl oak casks.
Ageing
The wine matured in oak for 12 months, with new oak accounting for 20%. After bottling, it remained in the estate’s cellars until early 2015.
Label / history
The name San Lorenzo refers to the valley in which the Ama castle stands. Castello di Ama was founded in 1972 and spent ten years studying the land, building cellars and conducting vineyard trials as part of the restoration of a landscape historically occupied by vineyards, olive trees and woodland.
