Tasting profile
Lively, luminous ruby red. Ripe red fruit leads the aromas, accompanied by raisins and dried plums. Sweet spices, coffee and chocolate follow, refreshed by balsamic nuances. The palate is rich and chewy yet soft, savoury and harmonious, with persistent aromatics. The finish recalls espresso and chocolate-covered cherry truffles.
Serving and pairing
Serve at 16–18°C. Cellaring potential is 1–10 years. Its balance suits both elaborate meat dishes and simpler, strongly flavoured fare, including Gorgonzola steak, beef stew with polenta, mushroom-braised meats, oxtail stew, stuffed guinea fowl, lamb with bacon and thyme, pork with apples and raisins, pheasant with peverada sauce, duck breast with cherries and Amarone sauce, chipotle burgers and balsamic-glazed pork chops. It can also accompany Stilton and Grana Padano served with plum mustard.
Label / history
Casa Defrà means “Casa dei Fratelli,” or House of the Brothers, conveying a convivial identity. Gran Mirajo is presented with a black-and-gold label.
