Vineyard and terroir
The grapes are hand-picked from 12 vineyards in eight municipalities across Franciacorta. The vines grow at around 250 m above sea level in a cool microclimate and mineral soils.
Vinification
Whole bunches are pressed at very low pressure in a pneumatic press. The must is divided into two fractions: the free-run must is reserved for Franciacorta, while the secondary press fraction is excluded from bottling. Alcoholic fermentation takes place in stainless-steel tanks at a controlled temperature of 16–18 °C. The base wine remains in tank until the following spring, followed by secondary fermentation in bottle.
Ageing
The wine rests on its lees for at least three years. Its name, “Milledi,” refers to the 1,000 days spent ageing on the lees.
