Vineyard and terroir
The fruit is grown in the Etna region, in vineyards close to an active volcano. The soils contain volcanic rock.
Vinification
After harvest, the grapes are gently pressed and fermented in steel tanks at a controlled temperature of 12–14 °C.
Ageing
The wine matures for nine months in stainless-steel tanks, followed by three months in bottle.
Tasting profile
Refreshing and mineral-driven, with a subtle saline note and an elegant fruit aroma.
Label / history
The name Erse refers to the Greek goddess of dew. It evokes the dew that forms on the grapes in the early morning, when the first sunlight reaches the night clouds.
