Vineyard and terroir
The grapes are grown in Grisì, Monreale, Sicily, in clay soils. Feudo Disisa’s approximately 150 ha of vineyards span nine microzones with differing exposures, slopes and altitudes. Temperature variations, abundant sunshine and good airflow create distinct microclimates. The average yield is 80 quintals per hectare.
Vinification
The grapes are harvested at optimal ripeness and carefully selected. Fermentation takes place at a controlled temperature of 15–16 °C.
Ageing
The wine matures in stainless-steel tanks for six months, followed by at least 60 days in the estate’s cellars after bottling.
