Vineyard and terroir
The grapes are grown in Grisì, Monreale. Feudo Disisa’s vineyards extend over approximately 150 ha and are divided into nine microzones with differing exposures, slopes and elevations. Temperature variations, abundant sunshine and ventilation create distinct microclimates. The Nero d’Avola vines grow on clay soils and yield an average of 90 quintals/ha.
Vinification
The grapes are harvested at optimal ripeness and carefully selected. Fermentation takes place under temperature control at 25–27 °C, followed by 15 days of maceration. The wine then undergoes malolactic fermentation.
Ageing
After malolactic fermentation, 30% of the wine matures in barrels and 70% in stainless-steel tanks. Following bottling, it rests in the winery’s cellars for at least 120 days.
