Vineyard and terroir
The vines grow in the hills of Eastern Friuli, on Eocene-era marble and sandstone soils known as "ponca".
Vinification
Harvest begins in the second week of September, when the grapes reach full ripeness. At the winery the grapes are destemmed, crushed and pressed. A fermentation starter, prepared beforehand from selected grapes of the same variety, is added to the clear must. Fermentation is slow, in stainless steel tanks at a carefully controlled 16 °C, and lasts 30–40 days.
Ageing
The wine ages in steel tanks with regular bâtonnage. It is bottled in February or March.
