Vineyard and terroir
The grapes come from the "Grim" vineyard, on a limestone plateau with a deep layer of gravel. The vines are more than 30 years old. Viticulture is organic.
Vinification
The grapes are harvested by hand and carefully selected for ideal ripeness and clean aromas. Vinification takes place in 500-litre French barrels at a controlled temperature.
Ageing
The wine spends 11 months on fine lees in barrel, with regular bâtonnage. At least another year in bottle follows.
Tasting profile
Fresh and expressive, with depth and a layered aroma. Complex fruit and floral notes. Bright mineral freshness and a gently rounded texture. Time in bottle adds softness and balance.
