Vineyard and terroir

The fruit comes from Tenuta Montenisa, situated around Borgo di Calino in the heart of Franciacorta. Conte Aymo is made from a selection of the estate’s best Pinot Nero grapes. The 2016 growing season brought favourable day-to-night temperature variations during ripening, encouraging aromatic complexity and giving the wine strong structure.

Grapes

100% Pinot Nero. The variety provides the wine with structure and personality.

Vinification

The grapes are harvested by hand and the bunches carefully selected. Small picking crates help preserve the berries and limit the risk of premature fermentation. Whole bunches are gently pressed in pneumatic presses; only the free-run must from the first pressing is used. Primary alcoholic fermentation takes place in stainless-steel tanks under controlled temperature. In the following spring, secondary fermentation begins in bottle.

Ageing

After the second fermentation, the wine remains in prolonged contact with the lees in bottle.

Tasting profile

The 2016 is bright straw yellow, with a creamy mousse and fine, persistent perlage. Its varietal character emerges through appealing red-berry aromas. The palate combines harmony and elegance with complexity, balance and the structural character of Pinot Nero.

Serving and pairing

Serve at 7–9 °C. Its structure and complexity suit fish and meat dishes of medium to high flavour intensity.

Vintage notes

The 2016 vintage benefited from optimal diurnal temperature variation during ripening, supporting aromatic complexity and excellent structure.

Label / history

The estate’s history is connected with the Mille Miglia motor race through Conte Aymo Maggi, one of its founders. His wife, Contessa Camilla Maggi, was also well known in Franciacorta for her charitable and social initiatives.
