Vinification
The grapes are harvested by hand, gently pressed at the winery and fermented in temperature-controlled stainless-steel tanks.
Ageing
The wine rests in bottle for 24 months in the winery’s cellars.
Label / history
The cuvée is produced as part of the “Vino Libero” project. Monte Rossa, meaning “Red Mountain”, was established in 1972 after the Rabotti family inherited an eighteenth-century villa on Monte Rossa hill in Bornato, in the province of Brescia. The founders were Paola Rovetta and her husband Paolo, who founded the Franciacorta Consortium and served as its first president. They supported the introduction of secondary fermentation and helped develop strict guidelines for the production of sparkling wine in Italy.
Emanuele Rabotti later took over the company from his parents. A modern winery was built in 2002. In 2011, Monte Rossa received Gambero Rosso’s “Stella” award in recognition of the consistently high quality of its wines over many years.
