Vineyard and terroir
The grapes grow in Franciacorta vineyards with sandy clay soils. The vines average 16–18 years of age.
Grapes
Selected Chardonnay is used, with reserve wine accounting for 5% of the blend.
Vinification
The grapes are harvested by hand and gently pressed at the winery. Fermentation takes place at a controlled temperature in stainless-steel tanks and oak barrels.
Ageing
The wine rests in bottle for 40 months in the winery’s cellars.

Label / history
In the Brescia dialect, “salvadek” means “wild”, referring to the wine’s bold character. Production in 2011 totalled 25,000 bottles.
Monte Rossa was established in 1972 after the Rabotti family inherited an 18th-century villa on Monte Rossa hill in Bornato, in the province of Brescia. The estate’s name means “Red Mountain”. Founders Paola Rovetta and Paolo supported the introduction of secondary fermentation and the establishment of strict production guidelines for Italian sparkling wine. Paolo founded the Franciacorta Consortium and served as its first president. Emanuele Rabotti later took over the business, and a modern winery was built in 2002. In 2011, Monte Rossa received Gambero Rosso’s “Stella” award, recognising the consistently high quality of its wines over many years.
