Vineyard and terroir
The Nebbiolo comes from Inferno, a small, renowned and demanding subzone between Poggiridenti and Tresivio. The vineyards average approximately 550 m in altitude and have sandy, silty soils. The vines are about 60 years old on average, trained to Guyot at a density of 4,500 vines per hectare. Average yield is 8,000 kg/ha.
Grapes
100% Nebbiolo. The must-to-fruit ratio is approximately 70%. The grapes are picked and sorted by hand.
Vinification
Cold maceration lasts two days, followed by five days on the skins.
Ageing
The wine matures for six months in used French-oak barriques and then for 30 months in chestnut casks.
Technical data
Approximately 14.0% alcohol by volume, 33 g/L dry extract, 5.5 g/L total acidity and less than 1 g/L total sugar. Production is approximately 10,000 bottles. These figures may vary with the vintage.
Tasting profile
Garnet red. Ripe wild berries and melted chocolate shape the inviting nose. Numerous yet unusually delicate tannins settle over the wine’s sweet fruit, while alpine herbs, rosemary, mint and liquorice emerge on the palate. The overall profile is elegant, delicate, lively and suitable for extended ageing.
Serving and pairing
Serve at 18–20 °C. Pair with roast meat, stews, braised meat and mature hard cheeses. The indicated ageing potential is ten years.
