Terroir
San Gervasio lies in the Pisa Hills, within the Tuscan countryside and 25 km from the Tyrrhenian Sea. The estate covers 400 ha, including 22 ha of vineyards planted at elevations between 160 and 200 metres above sea level.
The vineyards experience a dry, well-ventilated Mediterranean climate. Their proximity to the sea contributes to the local growing conditions. The soils have a mineral character connected to their marine origins.
Vinificazione
The vineyards are organically grown. Planting densities range from 6,000 to 10,000 vines per hectare, and yields are deliberately kept low per plant. Vineyard management combines attentive care of the land with technology intended to respect nature.
Technology is employed with the aim of respecting nature. The production approach seeks balanced, complex wines that convey both the care devoted to the vineyards and the mineral character of soils of marine origin. No cellar equipment or detailed vinification, maturation, stabilization, filtration or bottling procedures are described.
