Vineyard and terroir

Lavico Rosato comes from 5.5 hectares of Nerello Mascalese at Tenuta Vajasindi in Piano dei Daini, near Solicchiata on Etna’s northern slope. The vineyards lie at 622–652 metres above sea level on sandy, lava-derived soil with neutral pH, little active limestone and good organic content. Vines are trained on a vertical trellis and spur-pruned. Average yield is 60–70 quintals per hectare, equivalent to approximately 1.5 kg of grapes per vine.

Vinification

The manual 2024 harvest began on 23 September, with bunch selection performed on the vine to preserve fruit integrity. At the winery the crates were unloaded manually and the bunches destemmed. Inside a soft press, the must remained in contact with the skins long enough to extract part of their colour and create the wine’s delicate dusty-pink hue.

Ageing

After fermentation, the wine stayed in contact with its own yeasts for at least four months before bottling.

Technical data

The technical sheet gives 13% alcohol, total acidity of 6.30 g/L and a pH of 3.21; the wine page instead reports 12.5% alcohol. Available formats are 75 cl and 150 cl. Recommended serving temperature is 6–8 °C. Under suitable storage conditions, the wine can age for up to four years.

Tasting profile

Delicate dusty pink. Wild strawberry, exotic fruit and citrus aromas are joined by violet. The palate is enveloping, with a refreshing drive of freshness and the savouriness associated with its volcanic origin.

Serving and pairing

Serve at 6–8 °C with raw fish, medium-aged cheeses, white meat or legume soups.

Vintage notes

The 2024 season brought moderately rainy autumn and winter conditions, followed by a dry spring. Summer was hot, with rare but intense rain events. Complete ripening allowed harvest to begin on 23 September and contributed to the wine’s pronounced character and savouriness.
