Vineyard and terroir

The production area lies within Chianti Classico in Tuscany. The vineyard soils combine galestro and limestone, with predominantly clay material and gravel-sized stones. The vines are 25 years old. Tolaini is certified organic and carbon neutral.

Grapes

The 2023 wine is 100% Sangiovese. Grapes undergo an initial selection in the vineyard during harvest and a second selection by optical sorter upon arrival at the cellar.

Vinification

After destemming, the intact berries are transferred immediately to large oak fermenters. Alcoholic fermentation takes place under temperature control, with the must remaining on the skins for 20 days.

Ageing

The wine matures for 16 months in a combination of Tuscan, Slavonian and Austrian oak casks. It then spends 2 months in concrete tanks and a further 6 months in bottle.

The 2023 vintage has 14% alcohol by volume.

Tasting profile

Black cherry and blackcurrant form the fruit core, accompanied by earth, spice and leather. The palate is lush and balanced, leading to a long finish marked by tobacco.
