Vineyard and terroir

The grapes come from Tommasi-owned vineyards in the hilly Valpolicella zone.

Grapes

70% Corvina Veronese, 25% Rondinella and 5% Molinara.

Vinification

After careful selection, the grapes dry in a fruttaio for approximately three months. Fermentation then proceeds in stainless steel for 20–25 days at a controlled 25–30°C.

Ageing

Three years in 35 hl Slavonian oak casks.

Alcohol: 15% vol. Bottle size: 750 ml. First vintage: 1987.

Tasting profile

Deep ruby red. Intense ripe-cherry and plum aromas are followed by lightly floral and ethereal notes. Full-bodied and structured on the palate, with soft tannins that enhance the generous fruit. The finish is savoury and persistent.

Serving and pairing

Serve at 18°C according to the product page. Its rounded texture and body suit substantial dishes such as stews, braised meats, game and red meats. It also pairs with long-aged hard cheeses, including cheeses served with preserves.

Created in 1987, Il Sestante Amarone reflects careful grape selection and extensive experience with the Valpolicella drying method. Its style is built around elegance, structure, softness and complexity.
