About this wine
Vineyard and terroir
The 2021 Amarone is sourced mostly from Marezzane and Villa Cavarena, at 450-520 m a.s.l. The vineyards face south-east and have mixed, well-drained soils with limestone and clay. Guyot-trained vines average 15 years.
Grapes and harvest
The blend is mainly Corvina Veronese and Corvinone, with smaller percentages of Rondinella and Oseleta. Grapes are manually harvested and sorted in the vineyard in late September.
Appassimento and vinification
The grapes dry in the fruttaio, losing 40-45% of their original weight. Destemming and pressing are carried out in December. Fermentation takes place in stainless steel at 8-22 deg C for 25 days with continuous pumping over.
Ageing
Maturation takes place in new and second-passage barriques for at least 18 months. After blending, the wine rests 7 months before bottling and then ages at least 14 months in bottle.

Vintage 2021. Alcohol 16% vol. Total acidity 6.30 g/l. Residual sugar 2.1 g/l. Dry extract 34.3 g/l. pH 3.37. Formats include 750 ml, 1.5 L, 3 L and 5 L.
Tasting profile
Deep ruby red. The wine is full-bodied yet refreshed by acidity, with black cherry, prune, violet, black pepper, thyme, forest floor, graphite, nuts, figs and vanilla. The palate is intense, with ripe firm tannins and a very long finish. It can age for a further 20 years.
Vintage notes and pairing
The 2021 season had late budbreak after low April temperatures, delaying the cycle by 15-20 days. September rain and heat accumulation contributed to high acidity, strong ripeness and anthocyanin-rich healthy grapes. Pairings include Amarone risotto, pappardelle with mushrooms, braised meats, stews, aged cheeses and spiced desserts such as panforte.
