About this wine

Vineyard and terroir

The 2021 Recioto is sourced mostly from Marezzane and Villa Cavarena at 450-520 m a.s.l. The vineyards face south-east and have mixed, well-drained soils with limestone and clay. Guyot-trained vines average 15 years.

Grapes and harvest

Corvina Veronese and Corvinone dominate the blend, enriched with Rondinella and a touch of Oseleta. Selected bunches are harvested manually in late September.

Appassimento and vinification

The grapes dry in the fruttaio, losing 45-50% of their original weight. Destemming and pressing are carried out at the end of January. Fermentation takes place in stainless steel at 8-22 deg C for 25 days with continuous pumping over.

Ageing

The wine matures in oak barrels for 14 months, rests 2 months before bottling and ages at least 10 months in bottle before release.

Vintage 2021. Alcohol 13.96% vol. Total acidity 5.70 g/l. Residual sugar 93.5 g/l. Dry extract 131.9 g/l. pH 3.67. Format: 500 ml.

Tasting profile

The wine balances sweetness and acidity, with aromatic intensity and length. Aromas recall cherry jam, cinnamon, cloves, dark chocolate and mint. The palate is velvety, with soft but present tannins and remarkable persistence.

History, vintage and pairing

Giovanni Allegrini loved Recioto, and his descendants have dedicated this wine to him since 1990. Recioto is described as an ancient Valpolicella wine and the noble forefather of Amarone. The 2021 vintage had late budbreak, September rain and strong ripening, producing healthy, anthocyanin-rich grapes. Pairings include dry desserts, cocoa desserts, well-aged or blue cheeses and main courses with fruit or red-fruit sauces.
