About this wine
Vineyard and terroir
Palazzo della Torre bears the name of the vineyard around Villa Della Torre. The 2023 technical sheet notes that part of the grapes come from Villa Cavarena at 530 m a.s.l., on south-east-facing mixed soils with clay and limestone. Vines are Guyot-trained and average 15 years.
Grapes and harvest
The wine is made from a meticulous selection of red grapes from the Verona area, predominantly Corvina Veronese, Corvinone and Rondinella. Manual harvest takes place in the second decade of September and is carried out in two stages: grapes for drying and grapes for immediate vinification.
Vinification
Palazzo della Torre is the precursor of Allegrini's double-fermentation method. About 70% of the grapes ferment in stainless steel in September after normal red-wine vinification with destemming; the remaining 30% undergo gentle drying and ferment in December at 18-22 deg C. The two wines are then blended.
Ageing
Maturation takes place in barriques for at least 15 months. The wine rests 2 months before bottling and then ages at least 7 months in bottle before release.

Vintage 2023. Alcohol 13.77% vol in the PDF and 14.07% vol on the wine page. Total acidity 5.60-5.65 g/l. Residual sugar 3.3-3.6 g/l. Dry extract 35.1-35.6 g/l. pH 3.47-3.49. Formats include 750 ml, 1.5 L and 3 L.
Tasting profile
Ripe plum and cherry meet spicy, woody and balsamic notes. Chocolate, coffee and licorice enrich the finish, with iris and violet. The gentle sweetness from drying is balanced by vibrant acidity, giving structure, elegance and drinkability.
Vintage notes and pairing
The 2023 harvest was difficult, with below-average temperatures, frequent storms and fungal pressure, followed by August heat. Canopy trimming, green harvesting and careful management helped ripen the grapes. Pairings include eggplant parmigiana, lasagna, paella with chorizo and butter chicken.
