The grapes are grown in Orvieto.
Grapes
The wine is made from Procanico and Grechetto.
Vinification
The grapes are harvested entirely by hand, usually in September. At the winery they are destemmed and gently pressed. The must is cooled to 10 °C to clarify naturally, then moved to stainless steel tanks for fermentation at no more than 18 °C. Fermentation is stopped by rapidly lowering the temperature to 0 °C, which preserves the wine's natural residual sweetness.
Ageing
After filtration the wine is kept at a low temperature in steel tanks until bottling.
Tasting profile
Light yet complex, with a delicate, melt-in-the-mouth character and an elegant, almost weightless feel.
Label / history
Antinori has made "Casasole" since 1932. It was originally called simply "Orvieto Classico Amabile"; in 1998 it took the name "Casasole", after a farm on the Castello della Sala estate. It was produced at Castello della Sala until 2009. Since 2010 it has been made at another Antinori estate, Santa Cristina, also in Umbria.
