About this wine
Vineyard and terroir
The grapes come from estate-owned vineyards in San Gimignano, with the introductory description identifying the Podere Casale I° estate.
Grapes
Trebbiano and Malvasia.
Vinification
Selected grapes are late-harvested by hand and left to dry naturally for approximately three to four months. The lightly dehydrated fruit is then pressed. The must is vinified in small oak caratelli and barrels made from other fine woods, in various sizes and different ageing environments.
Ageing
The wine remains in its small wooden casks for at least 48 months; the detailed production description gives a minimum of four years or longer. Only the best casks are selected for bottling as Riserva, after which the wine is ready for release.
Technical data
Vin Santo del Chianti DOC Riserva. Alcohol: minimum 14.5% and maximum 17.0% vol.
Tasting profile
Intense golden yellow with deep amber and gold reflections. The broad, penetrating aroma combines dried fruit, nuts, honey, vanilla and sweet spices. Initially dry on the palate, it becomes soft, warm and harmonious, with excellent persistence.
Serving and pairing
Serve between 10°C and 18°C in a small dessert-wine glass or a balloon glass. Slightly chilled, it works as an aperitif with dry aged cheeses or fine foie gras. At room temperature, pair it with Tuscan almond biscotti, particularly those from Prato. It can also be enjoyed alone as a meditation wine. Ageing potential is 10–15 years and beyond.
Label / history
Vin Santo received the Chianti DOC designation in 1998, raising production standards across the region.
