About this wine

Vineyard and terroir

Cerbaiola is a Gran Selezione from Sangiovese vines in the estate's Cerbaiola vineyard at San Donato. It is conceived as an intense expression of the relationship between the variety and its terroir.

Grapes

100% Sangiovese.

Vinification

After crushing and destemming, alcoholic fermentation takes place with indigenous yeasts in small stainless-steel tanks. A long period of skin contact follows, supported by several punch-downs each day and délestage as required. Malolactic fermentation is completed in wood.

Ageing

The wine matures for approximately 16 months in Tuscan oak barrels of various capacities. Extended bottle ageing completes maturation and develops tertiary aromas.

Tasting profile

The wine is a bold ruby red. Violet and iris mingle with juicy red fruit and restrained tertiary notes. The palate is enveloping and warm, retaining characteristic acidity and a substantial tannic structure. Its rich, mouth-watering profile leads to a long, intense finish. The style combines power with sensitivity and strength with gentleness.

Serving and pairing

Serve at 18–19 °C. Pair with pappardelle in wild-boar ragù or other meat sauces, stuffed pasta, steak, grilled red meats, game, cured meats and well-aged cheeses.
