About this wine
Grapes
The wine uses Rosé, a clone of Nebbiolo.
Vinification
The grapes are harvested in October and pressed at the winery. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks with automatic pump-overs, followed by 30 days of post-fermentation maceration and 60 days of lysis.
Ageing
The wine matures for 36 months in large Slovenian oak casks, followed by a further 24 months in bottle.
Tasting profile
The 2012 vintage has a complex, layered nose of dried berries, sweet spices, resin and freshly grated truffle. It is elegant, with softened tannins and a velvety texture.
Label / history
The wine is produced only in selected years. Its label features a small yellow chick taken from a drawing by Elena, the daughter of the company’s director. She drew it for her mother, Nadia, when she was three years old. The Cogno family has made wine for four generations, passing its traditions from father to son.
