About this wine
Vineyard and terroir
Giacomo Fenocchio owns a 0.5-hectare plot in the Cannubi cru at 280 m above sea level. The dry, light soils consist of marl, tuff and sand, contributing to a more elegant style than the estate’s Villero and Bussia wines.
Vinification
The wine undergoes a long maceration without a fixed technological framework, followed by spontaneous fermentation with indigenous yeasts.
Ageing
It rests for six months in stainless-steel tanks and 30 months in Slavonian oak casks, followed by further ageing in bottle.
Tasting profile
The aroma is complex and intriguing, while the flavour is unpredictable.
Serving and pairing
Open the bottle one to two hours before serving and decant it.
