About this wine

Vineyard and terroir

The fruit comes from 3 ha distributed among various plots at Loc. Castagnoli, at an average altitude of 500 m above sea level and with varied exposures. The medium-textured ground contains abundant rock fragments characteristic of the Alberese area as well as limestone. The 30-year-old vines are spur-pruned, planted at 5,000 vines per hectare and yield an average of 1 kg per plant.

Grapes

90% Malvasia Lunga del Chianti and 10% Trebbiano Toscano.

Vinification

Harvest takes place during the second half of September. The grapes are laid on racks to dry for at least 3 months. Both alcoholic and malolactic fermentation occur in cask.

Ageing

The wine ages for at least 4 years in 100 L casks of various ages, followed by at least 6 months in stainless steel and at least 1 year in bottle.

Technical data

Annual production is approximately 1,000 bottles.

Tasting profile

Amber in colour, with a rich, intense aroma of honey, vanilla, dried fruit and nuts, particularly almond. The palate is enveloping and harmonious, leading into a long finish.

Serving and pairing

Serve at 16°C with blue or cured cheeses and desserts.

Label / history

This very small-production historic wine preserves the traditional methods associated with Vin Santo. It is dedicated to the ancestors who handed the custom down and is intended to keep that tradition alive for future generations.
