About this wine
Vineyard and terroir
The fruit comes from old vines and is harvested at peak ripeness.
Vinification
Produced only in exceptional years. For the 2020 vintage, the grapes were picked on 8–9 October. A five-day pre-fermentation maceration is followed by fermentation and further maceration at 30–32 °C. Slow malolactic fermentation takes place in barriques and continues until the following spring.
Ageing
The wine ages for 30 months in large oak barrels.
