Produced in Gualdo Cattaneo (PG).
Grapes
100% Sagrantino.
Vinification
The grapes are picked by hand and dried on racks under controlled temperature and humidity until the desired concentration is achieved. Fermentation and maceration then take place at a controlled 24–28°C.
Ageing
After racking, the wine continues maturation in line with the production regulation: 37 months in total, including at least four months in bottle.
Tasting profile
Concentrated aromas evoke blackberry, spirit-preserved cherry and fine spices. The palate is full, rounded and sweet without becoming cloying, with a light initial tannic impression and a very persistent finish.
Serving and pairing
Serve at 14–16°C in tulip-shaped glasses. Pair with dried fruit, apple strudel or chocolate cake.
Label / history
Passito represents the earliest documented style of wine made in Montefalco from Sagrantino grapes, with references extending back for centuries in local chronicles. The style combines Sagrantino’s characteristic profile with the sweetness and supple texture associated with a contemplative dessert wine.
