Vineyard and terroir
The Chardonnay grows in a vineyard on limestone soils, which give mineral freshness and a bright fruit character. The vines are young, and their grapes have a more concentrated flavour that adds richness to the palate. The wine comes from the San Lorenzo hills.
Vinification
The grapes are harvested by hand and carefully sorted. They are fermented in steel tanks under strict temperature control to preserve their aromas.
Ageing
The wine rests on fine lees for 8 months with frequent bâtonnage, which softens the palate and gives a silky texture. A final period of bottle ageing in the cellar lowers the acidity, brings balance and increases the wine's ageing potential.
