Vineyard and terroir
The fruit comes from Ronco del Canzutti, where hillside vineyards occupy east-facing terraces. The Ronco-zone soil has a substantial clay component known locally as ponca. The vines are trained to the short Sylvoz system. Yield is 1.60 kg per vine and 7,000–8,000 kg/ha.
Grapes
100% Friulano, historically known as Tocai. It is a traditional dry white and one of Friuli’s representative varieties.
Vinification
Harvesting is manual, into crates, and divided into two passes: one portion is picked in early September and the balance 10 days later. Whole grapes are gently pressed, while a portion is macerated for several hours. The must is clarified by cold static settling before controlled-temperature fermentation.
Ageing
The wine rests on its lees until March and is bottled in the spring following harvest.
Tasting profile
Straw yellow shading toward green. The bouquet recalls bitter almond, sage, elderflower and alfalfa hay. The palate is dry, soft, full and harmonious.
Serving and pairing
Serve at 10–12°C. Pair with appetizers, fish, snails, white meats and prosciutto crudo. It may also be enjoyed as the classic convivial Friulian Tajut.
