Vineyard and terroir
Ronco Vigna Traverso is planted in the Colli Orientali del Friuli, with eastern and north-eastern exposures. The marl soil has a balanced clay component and abundant rocky flysch fragments. The vines are trained to Guyot and short Sylvoz, with yields restricted to 0.8–1 kg per vine.
Grapes
100% Sauvignon.
Vinification
The grapes are harvested by hand into crates in early September and gently pressed. A portion undergoes cold maceration at 5°C for 7–8 hours. The must is then clarified by cold static settling and decanted before fermentation at a controlled 13–14°C.
Ageing
The wine remains on its lees until spring, when it is bottled, followed by several months of bottle ageing.
Tasting profile
A white wine with delicate greenish reflections and a complex, assertive bouquet of tomato leaf, green pepper, sage, mint, white peach, papaya, other exotic fruits and elderflower. The full-bodied palate is lively, fresh, mineral and aromatic, supported by good acidity.
Serving and pairing
Serve at 10°C. Pair with raw or cooked fish appetizers, first courses, cream soups, soups, asparagus and fried fish.
