Vineyard and terroir
The Chardonnay and Sauvignon come from the Sottocastello vineyard in the municipality of Prepotto, close to the Slovenian border. The vines occupy exclusively hillside sites, planted on east-facing terraces. The medium-textured soil contains a substantial proportion of coarse mineral material, associated with finesse and elegance in the aromas. The short Sylvoz training system is used, with a yield of 0.80 kg per vine.
Grapes
80% Chardonnay and 20% Sauvignon.
Vinification
The fruit is picked by hand into crates at full ripeness in late September. After destemming, the grapes undergo cold maceration in an inert-gas environment, followed by gentle pressing and static clarification of the must. The clear fraction is transferred to barriques for alcoholic fermentation, after which malolactic fermentation begins.
Ageing
Following fermentation, the barriques are topped up and the lees are stirred daily until March. The wine is then racked, filtered and bottled, followed by a further six months of bottle ageing.
Tasting profile
The complex aromatic profile evokes ripe fruit, wildflowers and oriental spices, integrated with toasted notes from the wood. The palate combines substantial structure with softness.
Serving and pairing
Serve at 12–14 °C. It can be enjoyed on its own as a contemplative wine or paired with substantial oven-baked fish and smoked foods.
