Vineyard and terroir
Ribolla Gialla comes from Ronco della Rosa in the Colli Orientali del Friuli. The vineyards face north-east and south-east. This part of the Ronco has a substantial presence of clay-rich local ponca. Yields are 90–100 quintals per hectare. The vines are trained to Cappuccina and short Sylvoz systems.
Grapes
100% Ribolla Gialla, an old native variety cultivated since Roman times.
Vinification
The grapes are harvested by hand into crates around the end of September. Destemmed grapes undergo a brief cold maceration at 7 °C for 7–8 hours, followed by gentle pressing. The must is cold-settled statically at approximately 5 °C, then fermented with selected yeasts at a controlled 18 °C.
Ageing
The wine remains on its lees until spring, when it is bottled, and then matures for several additional months in bottle.
Tasting profile
A dry white with a straw-yellow colour and green reflections. The bouquet combines elegant floral and fruity aromas. Pronounced acidity is well balanced by the wine’s body.
Serving and pairing
Serve at 8–10 °C. Pair with cold starters, sweet-and-sour sauces, soups, vegetables and fish.
