Vineyard and terroir
The Merlot comes from the upper part of the Ronco area, on a southeast-facing hillside. The clay-rich soil is locally known as ponca; together with the site’s exposure, it contributes depth, aromatic character and persistence. The Guyot-trained vines are more than 50 years old. Average production is 0.80 kg per vine, equivalent to a vineyard yield of 40 quintals per hectare.
Grapes
100% Merlot.
Vinification
The grapes are harvested by hand into crates in late September. Traditional red-wine vinification includes a 20-day maceration with daily délestage.
Ageing
The wine matures for 18 months in new French-oak barriques.
Tasting profile
The colour is an intense, nearly opaque red. Broad aromas recall raspberry and blackberry, while maturation adds cocoa and coffee to the bouquet. The palate is balanced in body, with elegant, non-aggressive tannins.
Serving and pairing
Serve at 16–18 °C. Pair with game, roast suckling pig, spit-roasted meats and mature cheeses.
