Vineyard and terroir

Troj comes from Ronco del Clinz in Prepotto. The vineyards stand at 160 m above sea level and face east. This part of the Ronco is marked by a substantial presence of clay-rich local ponca. Yields are 70–80 quintals per hectare. The vines are trained to Guyot and short Sylvoz systems.

Grapes

The composition given for the wine is 40% Merlot, 30% Refosco dal Peduncolo Rosso and 30% Schioppettino. The estate brochure notes that the proportions may vary with the vintage.

Vinification

The grapes are harvested by hand into crates at the end of September, then destemmed and crushed. Maceration is accompanied by daily délestage. Malolactic fermentation is completed in wood.

Ageing

The wine matures for approximately 11 months in stainless-steel tanks and barriques of different ages, followed by several months of bottle ageing before release. French wooden barrels are used for the estate's red wines.

Tasting profile

Deep ruby red. The full, robust nose recalls sour cherry and raspberry. With maturation, the bouquet develops peppery nuances. The palate is dry, structured, savoury, fruity and full-bodied.

Serving and pairing

Serve at 16–18 °C. Pair with cured meats, roasts, grilled dishes and rabbit.
