The grapes are carefully selected.
Vinification
The grapes are pressed immediately after harvest to preserve their vibrant character. The wine is produced by the Charmat method in stainless-steel tanks. Pressure is carefully controlled as the bubbles develop, and rapid cooling at the height of fermentation stops the process while retaining balance and fresh fruit flavours.
