Vineyard and terroir
Gewurztraminer is difficult to grow and yields little. It is prone to mutation, and its many clones can differ greatly from one another. The variety is very particular about soil and climate, so in Trentino it is grown only in small pockets. It prefers stony or very loose, non-calcareous soils, moderate elevations, plenty of sunlight and a moderately cool climate. The vines are between 10 and 25 years old.
Grapes
Gewurztraminer is the German name for Traminer aromatico, a variety that originated in Central Europe and German-speaking countries. The grapes have pink skins but are used to make white wine.
Vinification
The harvest is timed to reach the highest possible sugar concentration without losing the grape's distinctive aromas; it usually takes place in the first 3 weeks of September. The grapes are destemmed and crushed, and the resulting mass is cooled. The juice stays in contact with the skins for a short time to bring out more of the variety's natural aromas. Fermentation is held at a constant 17–19 °C, after which the wine rests on its fine lees for several weeks.
