Terroir
Cantina Sociale di Trento is assigned to the Valle dell’Adige wine-growing macro-area in Trentino.
The valley’s alluvial plain is dominated by silt and sand. Along the mountainsides, dolomitic limestone soils were formed from material transported and accumulated by rivers or glaciers; these sites are particularly associated with Chardonnay for both sparkling-wine bases and still wines. Closer to the mountains, sedimentary soils with a predominance of siltstone provide conditions suited to red grapes and aromatic white varieties.
Valle dell’Adige also has a cool, ventilated climate. The macro-area encompasses both the valley floor and foothill or hillside positions, producing substantial variation in soils and growing conditions within the zone.
Winemaking
Cantina Sociale di Trento participates in the common vineyard-management framework applied to Cavit’s associated wineries and winegrowers.
Small-scale, manual vineyard work
The network’s growers cultivate an average of 1.2 ha each. This fragmented structure permits close attention to individual vineyards and supports manual harvesting.
Precision viticulture
The vineyards are supported by PICA — Piattaforma Integrata Cartografica Agriviticola, developed by Cavit in 2010 with Fondazione Edmund Mach and Fondazione Bruno Kessler. Sensors collect vineyard data in real time; processed information is returned to growers through personalised notifications to guide daily decisions.
Soil mapping and geoclimatic analysis are used to match varieties to individual plots. The system also supports checks and selection throughout the agronomic cycle and monitors grape ripening to determine the appropriate harvest point.
PICA is used to rationalise plant-protection treatments, manage pathogen pressure, adjust inputs to each vineyard through continuous monitoring and optimise water use. A specialist team of agronomists, the Cavit Viticulture Group, assists growers with vineyard monitoring and protection under the direction of Cavit technical director Andrea Faustini.
Integrated production and biodiversity
All members of the Cavit system hold SQNPI — Sistema Qualità Nazionale Produzione Integrata certification. Promoted practices for soil health, biodiversity and landscape protection include green manure, the preservation or use of dry-stone walls and insect mating disruption.
Cantina Sociale di Trento is one of the first-tier supplying cooperatives within Cavit’s second-tier consortium. In this structure, raw materials from the associated wineries are collected, assessed and selected centrally. Cavit coordinates and monitors the chain from viticulture through the commercial stage, using shared technical expertise and resources to preserve the identities of the different Trentino growing areas while pursuing consistent quality.
