About this wine
Vineyard and terroir
The fruit comes from Tenuta Corte Giacobbe’s vineyards in the hills of Roncà, Veneto, near Venice. The vines grow at 500 m on the slopes of the extinct volcanoes Calvarina and Crocetta. The mineral-rich soils consist of lava and tuff formed by eruptions during the Miocene epoch, around 40 million years ago. A moderate climate, marked day–night temperature differences and air currents from the Alps supports ripening.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. The bunches are gently pressed, and the must is clarified by gravity before inoculation with cultured yeast. Fermentation takes place at a controlled temperature of 13 °C.
Ageing
The wine rests on its fine lees in stainless-steel tanks for at least three months, with weekly bâtonnage, followed by a minimum of 45 days in bottle.
