About this wine

Vineyard and terroir

Fossati is a 1.8 ha vineyard in La Morra. The Guyot-trained vines face east to southeast and rise from 370 to 420 m. The subalkaline silty-clay soil is poor in organic matter. The planting combines 30% 60-year-old vines with 70% 15-year-old vines. Nebbiolo clones are CVT CN 142, CVT 230, CVT 36 and CVT 111.

Grapes

100% Nebbiolo.

Vinification

The 2015 fermented for 20 days at controlled temperature, with daily punch-downs and pump-overs, followed by additional post-fermentation maceration on the skins. Across the estate, fruit is harvested by hand, brought immediately to the winery, carefully sorted, destemmed and crushed. Indigenous yeasts conduct alcoholic fermentation. After pressing and a coarse racking, spontaneous malolactic fermentation takes place in stainless steel. Barolo is bottled without filtration.

Ageing

The 2015 matured for 30 months in used French oak barrels before transfer to stainless steel.

Technical data

The 2015 yielded 40 q/ha and reached 14.5% alcohol. Production comprised 5,116 standard bottles, 100 magnums and 25 double magnums.

Tasting profile

Bright ruby with a light orange rim. Dark fruit and sweet spice are joined by liquorice and dried rose. The palate has focus and weight, a succulent texture, an elegant structure and fine tannins. It is concentrated yet approachable, finishing with mouth-watering freshness.

Serving and pairing

Serve at 17–18°C and decant. Cellaring potential is 15–20 years.
