About this wine
Vineyard and terroir
The Fiano is grown in four vineyards spread across four municipalities in the province of Avellino: Candida, Montefredane, Lapio and San Michele di Serino. The vineyards lie at 450–500 m above sea level. Soils vary and include clay-limestone, marl, clay, loam and sandy loam.
Vinification
Harvest takes place in the first week of October. The bunches are picked by hand and carried to the cellar in small crates, to keep the fruit as intact as possible. They are gently pressed as whole bunches to obtain free-run must. The must is settled, then fermented in stainless steel tanks with selected yeasts at 16 °C.
Ageing
The wine rests on its fine lees in the same stainless steel tanks for 4 months. It is bottled in the second week of February of the year after the harvest.
