Vineyard and terroir
The wine comes from a particularly suitable plot within the estate’s Sagrantino vineyards in Gualdo Cattaneo (PG), a site presented as part of the grape variety’s historic cradle. Its character is achieved by bringing out the grape’s intrinsic qualities rather than by using a different processing method.
Grapes
100% Sagrantino.
Vinification
Fermentation and maceration proceed at a controlled maximum temperature of 28°C with daily pump-overs. After alcoholic fermentation, maceration continues for several days at 32°C. Racking takes place when the desired degree of polyphenolic extraction has been reached, after which the wine is transferred to oak barrels.
Ageing
The production specification calls for 37 months of total ageing, including 12 months in wood and at least four months in bottle. Ò di Còlpetrone spends 12 months in oak, followed by prolonged maturation in steel tanks and bottle.
Tasting profile
Intense ruby red with garnet highlights. The nose is concentrated and complex, led by spice and red-fruit jam. Powerful and dense on the palate, with a long finish.
Serving and pairing
Serve at 18°C in large glasses. Pair with roasted red meats, game, rich or elaborate dishes, and aged cheeses.
Label / history
The name begins with “Ò” as an exclamation of astonishment and wonder, recalling the spontaneous reaction at the wine’s first tasting. The cuvée emerged from the winemaking team’s work with one of the estate’s most suitable Sagrantino plots.
