Vineyard and terroir

Sacer comes from selected Sagrantino parcels in Gualdo Cattaneo (PG), chosen for their exposure and soil type. The interaction of terroir, exposure and microclimate gives the grapes distinctive organoleptic characteristics.

Grapes

100% Sagrantino.

Vinification

The grapes are collected into boxes. Fermentation and maceration take place at a controlled 24–28°C, with daily pump-overs and délestage. Once alcoholic fermentation is complete, maceration continues at 29°C. After racking, the wine moves to oak barrels and receives weekly bâtonnage for six months.

Ageing

Montefalco Sagrantino regulations require 37 months of total ageing, including 12 months in wood and at least four months in bottle. Sacer spends a further six months in wood after its first six-month barrel phase. Very long maturation in steel and bottle follows, for at least 12 years. It is held in bottle longer before release than any other wine of the estate.

Tasting profile

Deep red in colour, with an intense nose of red fruit and leather. The palate shows marked tannic concentration. Its richness and long maturation profile are intended for extended ageing.

Serving and pairing

Serve at 18°C in large glasses. Pair with roasted red meats, rich dishes and aged cheeses.

Label / history

Sacer grew out of years of work with the estate’s Sagrantino vineyards. From the first year of production, the estate chose to delay release so that this cellar cru could reach a suitable stage of maturity before being offered as a long-aged wine.
