Vineyard and terroir
Nebbiolo vines average approximately 70 years of age and are trained by the Guyot system. The vineyards lie at an average altitude of 650 metres on sandy, silty soils, with a density of 4,500 vines per hectare and a yield of 6,500 kg per hectare. The must-to-fruit ratio is approximately 50%.
Grapes
100% Nebbiolo. The bunches are picked and selected by hand before a drying period reported as 2½ months in the technical sheet and three months on the wine page.
Vinification
Vivo is conceived as a fruit-led reinterpretation of Sforzato di Valtellina. Infusion-style maceration extracts colour, aromas and tannins gently and progressively, preserving the expression of the concentrated fruit. Fermentation takes place in 500-litre tonneaux; controlled oxygen contact contributes softness, elegance and complexity.
Ageing
The wine matures for 12 months in 500-litre French oak tonneaux. The restrained wood treatment is intended to preserve the purity of the fruit rather than overlay it with oak aromas.
Technical data
Approximately 16.5% alcohol by volume, 32 g/l dry extract, 4.5 g/l total acidity and less than 1 g/l total sugar. Approximate production is 2,000 bottles. Technical figures may vary with the vintage.
Tasting profile
An intense, fragrant expression centred on concentrated Nebbiolo fruit. Its structure combines softness, elegance and complexity with gently extracted tannins. It is approachable in its youth while retaining substantial capacity to evolve.
Serving and pairing
Serve at 20–22 °C. The bottle format is 75 cl, and the stated cellaring potential is 20 years.
