History

2016/17

Cantina di Aldeno formed part of Cavit's ten first-level contributing wineries. It represented Vallagarina within a cooperative network spanning five Trentino winegrowing macro-areas.

2017/18–2019/20

Damiano Dallago represented Cantina di Aldeno as a member of Cavit's board of directors throughout this period.

2020/21

Following the enlargement of the cooperative network, Cantina di Aldeno became one of eleven member wineries. Cavit operated as a second-level consortium whose members were cooperative wineries representing more than 5,250 winegrowers across Trentino. Cantina di Aldeno retained its geographic assignment to Vallagarina.

2021/22–2024/25

Cantina di Aldeno continued as one of the eleven associated cooperative wineries. Damiano Dallago remained its representative on the Cavit board through the 2024/25 financial year.

2017/18Damiano Dallago served on Cavit's board of directors as the representative associated with Cantina di Aldeno.
2020/21Cantina di Aldeno was included among Cavit's eleven cooperative member wineries and remained assigned to Vallagarina.
2022 harvestThe Cavit supply-chain certification programme concluded with BRCGS certification for all participating member wineries; the integrated-production system also extended SQNPI certification from winegrowers to member wineries and Cavit.
2024/25Cantina di Aldeno remained one of Cavit's eleven associated wineries, with Damiano Dallago continuing as its representative on the consortium's board.

Terroir

Cantina di Aldeno belongs to the Vallagarina winegrowing macro-area of Trentino.

Vallagarina has a moderate continental climate and a varied geological profile. Its valley floor contains sandy and silty soils of alluvial origin. The hills have glacial, dolomitic and calcareous soils, while specific sectors around Isera and Brentonico contain structured basaltic soils. These descriptions define the wider macro-area; no soil profile, elevation, aspect or mesoclimate is assigned specifically to Cantina di Aldeno's vineyards.

The Vallagarina macro-area supports Pinot Grigio, Chardonnay, Müller Thurgau, Moscato Giallo, Marzemino, Lagrein, Merlot and Cabernet Sauvignon. This is the regional varietal range rather than a confirmed planting list for Cantina di Aldeno.

Cantina di Aldeno participates in Cavit's cooperative viticultural system, under which the member winegrowers receive technical and agronomic support throughout the vine's phenological cycle and through harvest.

The network is characterised by small vineyard holdings averaging 1.2 ha across all Cavit members. This structure is associated with detailed, artisanal vineyard care. Harvesting is manual, allowing grapes to be selected directly in the vineyard.

Precision viticulture

Since 2010, PICA—Piattaforma Integrata Cartografica Agriviticola—has operated throughout the territories of Cavit's member wineries. Developed with Fondazione Edmund Mach and Fondazione Bruno Kessler, it combines soil mapping, geo-climatic analysis, vineyard records, sensor data and predictive models. Data collected in the vineyards are processed into personalised guidance for winegrowers and cellar technicians.

PICA is used to match grape varieties to individual parcels according to technical and environmental parameters, conduct controls and selections during the agronomic cycle, monitor ripening and determine the optimum harvest period. Its sustainability functions include rationalising plant-protection treatments, supporting pathogen control, tailoring resources to each vineyard through continuous monitoring and optimising water use.

Integrated production

Winegrowers, their cooperative wineries and Cavit participate in the Italian SQNPI integrated-production system. The system applies crop-specific technical rules, binding plant-health guidance, restrictions on products and limits on treatment frequency, with the aim of reducing chemical inputs while respecting ecological and economic principles. The wider network also adheres to the Trentino protocol for quality winegrowing, which evaluates vineyard practices against sustainability objectives.

No organic or biodynamic status is attributed specifically to Cantina di Aldeno.

Cantina di Aldeno operates within a two-tier cooperative supply chain. Cavit receives, examines and selects raw materials supplied by its associated wineries and monitors the chain from viticulture through marketing. Technical support extends from assessment of vineyard suitability and management of the vine's phenological stages to harvest, maturation, bottling and commercial distribution.

The consortium model combines the identities of individual growing areas with shared agronomic, technical and commercial resources. A broad, parcelled vineyard base allows raw materials to be allocated to the most appropriate product lines and enables seasonal differences among local areas to be balanced.

No cellar layout, grape-reception system, fermentation protocol, maturation vessel, blending practice, filtration regime, sulphur policy or bottling procedure is attributed specifically to Cantina di Aldeno.

Philosophy

Cantina di Aldeno's defined role is cooperative. It contributes the identity of Vallagarina to a shared system that combines small-scale vineyard care with centralised technical knowledge, precision technology and common quality controls.

Within this model, territorial diversity and vineyard parcelisation are treated as productive assets. Varieties and raw materials are directed according to site suitability and intended use, while the breadth of the cooperative vineyard base helps balance local seasonal and climatic variation. The approach brings together manual vineyard work, traditional farming knowledge, research, agronomy and precision monitoring.

Environmental, social and economic sustainability are integrated into vineyard management through targeted use of water and plant-protection inputs, continuous monitoring and technical support for individual growers.
