Cooperative relationship
Vivallis is one of the 11 wineries associated with Cavit and represents Vallagarina within the consortium's territorial structure. The relationship places Vivallis in a second-level cooperative system in which the associated wineries supply the raw materials and Cavit coordinates selection, technical support, production oversight and marketing.
2016/17
Cavit carried a €300,000 participatory loan relating to Vivallis. The financing formed part of a participatory fund administered by Promocoop under Article 26 of Trentino Provincial Law No. 16 of 2008.
2018
Cavit held 30% of the Promocoop participatory fund associated with several supplying members, including €300,000 relating to Vivallis. The financing generated an annual return of 2% when the financed cooperative reported a profit, and Cavit could withdraw after six years and six months from subscription.
2020/21
The €300,000 Vivallis SCA participatory loan remained recorded among Cavit's financial investments. Cavit also held a separate €26 participation in Vivallis SCA.
2022/23–2023/24
Cavit continued to record a €26 participation in Vivallis SCA. The participatory loan was no longer included in the corresponding investment tables.
2024/25
Vivallis remained one of Cavit's 11 associated wineries and continued to be assigned to Vallagarina. Mauro Baldessari represented Vivallis on Cavit's board of directors.
Terroir
Vivallis represents Vallagarina, one of the five principal vine-growing areas in Cavit's Trentino network.
Vallagarina has a moderate continental climate and substantial geological variation. Its valley floor has sandy and silty alluvial soils associated with readily approachable white-wine styles. The hills have glacial, dolomitic and calcareous soils suited to white wines intended for ageing. Around Isera and Brentonico, well-structured basaltic soils support both sparkling-wine bases and red-wine production.
The grape varieties associated with the Vallagarina macro-area are Pinot Grigio, Chardonnay, Müller Thurgau, Moscato Giallo, Marzemino, Lagrein, Merlot and Cabernet Sauvignon. This is a regional inventory rather than a Vivallis-specific planting list.
Winemaking
As an associated winery in the Cavit system, Vivallis participates in a supply chain supported by PICA — Piattaforma Integrata Cartografica Agriviticola. Cavit created the platform in 2010 with Fondazione Edmund Mach and Fondazione Bruno Kessler. It now operates at full capacity as the agronomic model used across the cooperative network.
PICA combines complete soil mapping, geo-climatic analysis, vineyard sensors and real-time data processing. Its functions include identifying the varieties best suited to the technical and environmental parameters of each parcel, conducting controls and selections through the agronomic cycle, monitoring ripening to determine the optimal harvest point and returning personalised guidance to individual winegrowers.
The sustainability functions include rationalising plant-protection treatments, helping growers manage pathogens, matching inputs to each vineyard through continuous monitoring and optimising water use. The specialised agronomists of the Cavit Viticulture Group implement the system under Andrea Faustini's direction and assist growers with vineyard monitoring and protection.
Cavit's cooperative model is based on small member holdings, averaging 1.2 ha across the network. This structure supports close, artisanal vineyard care and manual harvesting. The network has also adhered for more than 20 years to the Protocol for the Production of High-Quality Wines in Trentino, which continually assesses whether viticultural practices are compatible with fully sustainable agriculture.
Vivallis operates within Cavit's second-level cooperative structure. The associated wineries produce the raw materials, while Cavit collects, examines and selects them and supervises the chain from viticulture through marketing.
The model uses the territorial spread and parcel diversity of the member wineries to direct grapes towards the product lines considered most appropriate for their characteristics. Shared technical resources and coordinated oversight are intended to preserve the identities of the individual growing areas while maintaining consistent quality between harvests.
Philosophy
Vivallis participates in a cooperative model built around local territorial identity, shared expertise and coordinated resources. The system seeks to match each vineyard and grape source to the most suitable use, while balancing seasonal and climatic variation across Trentino to maintain quality from one harvest to the next.
The shared viticultural approach combines traditional farming knowledge with agronomic research, objective data and precision technology. Its stated goals are careful use of resources, continuous vineyard-level monitoring, respect for the territory and environmental, social and economic sustainability.
