Cennatoio's vineyards and cellars had already existed for many centuries before its official founding, though in earlier times its wine was not produced for commercial sale. The winery was officially founded by the Alessi family in 1970.

Terroir
The winery is set in a location with panoramic views across Chianti, taking in vine-covered hills, olive groves, churches, castles, and oak forests. Vineyards are planted at 450–620 meters above sea level, on stony, marl-based soils, with southern and southeastern exposure.
